500g potatoes

250g button mushrooms

1 onion

2 garlic cloves

200ml double cream

200ml stock (chicken or vegetable)

1 tbsp flour

2 tbsp 1 tablespoon of oil

1 knob of butter

1 bay leaf

1 small sprig of thyme (or dried thyme)

Salt, pepper

Parsley (optional, to finish)
