Make the swicy hot honey caramel: heat sugar in a light-colored pan over medium without stirring β swirl gently as edges melt until fully amber. π―
Pull off heat immediately β add warm cream carefully, stand back as it bubbles violently.
Add cold butter and stir until smooth β add honey, chili flakes, apple cider vinegar, and flaky salt.
Stir until completely combined and glossy β cool to room temperature, it thickens as it cools.
Make the puff pastry twists: unroll cold puff pastry and cut into strips 1.5cm / Β½-inch wide. π₯
Hold each strip at both ends and twist firmly in opposite directions β creating a tight, even spiral.
Place on a parchment-lined tray β brush with egg wash and scatter sesame seeds and everything bagel seasoning across each twist.
Bake at 200Β°C / 400Β°F for 12β15 minutes until deeply golden and shatteringly crisp. π₯
Cool completely on a wire rack β they crisp further as they cool.
