🍚🌶️ Achar Fried Rice (Pickle Fried Rice)

👩‍🍳 Instructions:
1. Prepare base
Heat oil in a pan or wok
Add cumin seeds and let them splutter
2. Sauté aromatics
Add onion, garlic, and green chilies
Cook until golden and fragrant
3. Add flavor
Mix in chopped tomato (if using)
Add achar + a little pickle oil
Stir well so spices release aroma
4. Add rice
Add cold cooked rice
Break clumps and mix gently
Add turmeric, pepper, and salt (careful with salt)
5. Fry & finish
Stir-fry on medium-high heat for 3–5 minutes
Let rice absorb all flavors
Garnish with fresh coriander
