Let the mixture cool slightly. It should be warm but not hot.

Carefully separate the egg whites from the yolks.
Place yolks in one bowl.
Place whites in another clean, grease-free bowl.
This separation is key to creating the cake’s airy texture.

Using a mixer, beat the egg whites until soft peaks form.
