Step 1: Prep the Celery
Rinse the celery sticks and pat them completely dry.
Tip: This is key! Any moisture can cause the cream cheese mixture to slide off instead of staying in the “boat.”
Step 2: Make the Creamy Base
In a medium bowl, combine the softened cream cheese and sour cream. Mix until completely smooth and lump-free.
Step 3: Add Flavor and Mix
Stir in the shredded cheddar, crumbled bacon, chopped green onions, garlic powder, onion powder, salt, pepper, and smoked paprika (if using). Mix until everything is well combined. Taste and adjust seasoning, adding a little more salt or paprika if desired.
Step 4: Fill the Celery Boats
Use a small spoon or a butter knife to generously fill each celery stick with the cream cheese mixture. Smooth the top so it’s level with the edges of the celery.
Step 5: Chill and Serve
Arrange the filled boats in a single layer in a glass dish. Cover and refrigerate for at least 20–30 minutes. This sets the filling and ensures the celery stays crisp and refreshing for every bite. Serve chilled.
