In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chicken to the pan and cook for around 5-7 minutes until the chicken is golden brown and fully cooked through. Cook the aromatics and create the bruschetta mix
In the same skillet, after removing the chicken, throw in another tablespoon of olive oil and add a mix of finely chopped aromatic vegetables: 1 chopped onion, 2 minced garlic cloves, and 1 diced bell pepper. Sauté until they soften, around 4-5 minutes. This is where your kitchen will start to smell absolutely divine!
