Step 1. In a large Dutch oven, heat the Olive oil over medium heat
Step 2. Toss in the onions, all the bell peppers, and the tomatoes
Step 3. Cook on medium high heat for 4 to 6 minutes
Step 4. Add in the Garlic, Thyme, salt and pepper, and the Tomato paste
Step 5. Stir to combine
Step 6. Continue to cook for an additional 2 minutes before adding the broth
Step 7. Add in the 3 cups Beef Broth
Step 8. Add in the chopped cabbage
Step 9. Increase the heat until it comes to a boil
Step 10. Reduce the heat to low,
Step 11. Simmer for 15 to 20 minutes
Step 12. Serve and enjoy!
